Veggie Prepping

Food shopping and preparing veggies and meals, are just like brushing your teeth, showering/bathing, doing daily/weekly chores/task and taking care of loved ones. You just fit it in like all the other important tasks. At least that’s how I look at it. I’m also motivated by all the positive improvements with this lifestyle. Most of my life I struggled with IBS, GERD, insomnia, anxiety, grinding teeth, leaky gut, mood swings, and illnesses related to a weak immune system like bronchitis, sinus infections, strep, and colds. All of it was related to diet, stress, hormone imbalances, and heavy metal toxicity. Much of it has been resolved with a healthier lifestyle!

Soak veggies for at least 30 minutes in warm to hot water. Add to the water either baking soda, apple cider vinegar, or a vegetable cleaning solution from Trader Joe’s, which is what I use;

Chop up the veggies into the size you like. You want to make sure you cut them according to their cooking time. See Know Your Foods; then

Store in bags or containers in the fridge.

When it comes times to cooking, if you are using an InstantPot, then add about an inch of spring water and as much a variety as you can.  Set on STEAM for 2 minutes. You can either make enough for the day or for just a meal.
